Loaded Baked Potato Soup

For me, during the beginning of my pregnancy, and even now- I am all about potatoes. I've always been a fan, and I'll take them in any form.. this is one craving that had to be satisfied. A hearty and delicious baked potato soup. I'd only ever had it from markets and restaurants.. but it's an easy recipe. Maybe a little wintery with Spring right around the corner, but I don't care... It is YUMMY! There are alot of baked potato soup recipes out there, some are complicated.. all are delicious. But this one is fast, painless, and so yummy. It'll warm you up!

Here's the Quick and Dirty..

Preheat the oven to 400F.  Pierce the potatoes with a fork; bake at 400 for 1
hour until tender.  Cool.  Peel the potatoes; coarsely mash
Lightly spoon the flour into a dry measuring cup; level with a knife.  place
flour in a medium pot; gradually add milk, stirring with a whisk until
blended.
Cook over medium heat until thick and bubbly (about  8 minutes).  Add mashed
potatoes, 3/4 cup cheese, salt and 1/2 teaspoon pepper, stirring until cheese
melts.  Remove from heat.
Stir in sour cream and 1/2 cup green onions.  Cook over low heat 10 minutes
or until thoroughly heated (do not boil).  Ladle 1/2 cup soup into each bowl. 
Sprinkle with cheese, green onions, and about as much bacon as you want. (So good with vegetarian bacon strips too... promise.)
