We don't really eat red meat very often. But once in awhile, we like to include it in the dinner rotation. Last weekend I got a wild hare about steak pinwheels. The flavor of red pepper, spinach, and feta tastes good with just about anything.. and what better fixin's for steak?
We chopped lots of fresh red peppers, organic spinach, and Feta cheese into strips..
Then we seasoned the meat with sea salt and freshly ground black pepper.
I staggered the red peppers, spinach, and feta til I was satisfied. We added a little minced fresh garlic into the mix too. Nothing crazy or fancy, just a simple dish..
Then I rolled up the meat, careful to keep the stuffings in place, and secured each pinwheel with a wooden skewer. Albin worked his grilling magic.. 8 or 9 minutes on each side.
We served it with fresh rolls, and a BIG green salad.
It was tasty and hit the spot.. Weird pregnancy meal.. maybe.. but I LOVED it!
For me these days, smaller meals are key. I can't stuff myself or I feel sick, and I MUST save room for dessert.. this meal definitely left room for my evening Haagen Dazs sundae!
